Who sparked your love of making?
I don’t think it was a person as much as it was tasting fine chocolate while in Germany in the 1990s. I was amazed at how much better and different from the standard commercial chocolate it was. Since then I tried many types of chocolate and think of how it is made.
What is your favorite product or piece you’ve made lately?
Dark chocolate mendiants, they originated in France in the 1600s as part of the french Christmas tradition. Chocolate mendiants are small disks of chocolate garnished with assorted topping that can include various nuts and dried or fresh fruit. They are part of the Christmas tradition in Provence.
What inspires you during the holiday season?
Family and friends. All the great decorations and food.

What is your favorite holiday food or recipe and why?
Stollen a traditional german christmas bread. So good with coffee.
